03 Apr Spicy Egg and Sausage Casserole
Where are all my spicy food lovers???
Oh my goodness! I was looking for something to make for breakfasts, and when I came across this, I had to try it! So glad I did!!! If you want to have a quick breakfast, with SO MUCH FLAVOR, and like a little KICK…..you have to try this casserole!!
1 lb sausage (spicy will give the dish a little extra kick and really good)
If you want to go healthier, use ground turkey sausage or turkey sausage links and slice.
2 small zucchini’s shredded
1 small onion diced
1 cup cheese (1/2 in casserole, 1/2 for on top)
Sweet chili sauce (1/2 bottle)
Eggs (12 eggs)
¼ cup milk
THIS ADDS THE SPICE!!!!!
Preheat oven to 350
In a skillet, with a little olive oil brown the sausage and add the zucchini, onion, and sweet chili sauce. Let it cook down so the zucchini and onion release the moisture (if not precooked will make for watery casserole).
Beat the eggs with the milk and then add the cheese (1/2 cup).
Pour Meat mixture into a 13×9 greased pan and then pour egg mixture over and stir.
Bake for 50-60 minutes (test with a toothpick!) for the last 5 minutes spread remainder of cheese over the top to melt over the casserole.
