31 Aug Chocolate Chip Pumpkin Pie Protein Bites
Oh my goodness!!! I stumbled across this recipe and had to try it out! Anything PUMPKIN, sign me up!! I love Fall and all the pumpkin recipes that come along with it!!
When I make these, I usually double the recipe below, so I have extra to freeze when I need a sweet treat!! My food processor wasn’t very strong, so it didn’t mix all the ingredients very well. I just put the nuts in the food processor and then just mixed everything in a large bowl with my hands.
1 cup raw almonds
¾ cup rolled oats
½ cup dates, pitted (about 6)
7 ounces organic Pure pumpkin puree
1 scoop vanilla shakeology

½ tsp cinnamon
¼ tsp nutmeg
⅛ tsp cloves
4 tbsp raw pumpkin seeds
1 tbsp mini dairy free chocolate chips
Add almonds, oats, dates, pumpkin puree, protein powder, and spices to food processor.
Turn on until a choppy dough forms, several minutes.
Add only 2 tbsp of raw pumpkin seeds, and pulse until combined so the pumpkin seeds remain a little course
The dough should be slightly sticky.
In a ninja, or small blender, quickly chop the remaining 2 tbsp of pumpkin seeds with chocolate chips, you want to just chop. Pour mixture into small bowl for the topping.
Roll dough into balls, roll each in the pumpkin seed chocolate chip topping, place on a cookie sheet.
Put in Freezer for at least 20 minutes to set. Store uneaten balls in a airtight container in Fridge or Freeze!!
