Who doesn’t love an easy Crockpot recipe!?

No cooking required!! Just coming home to a delicious smell, and dinner is ready! I love homemade chips, I recently learned of this recipe as well, which I have shared on my site. They beat any tortilla chip you can buy at the store!! Having them added on top of this soup, just makes it all the better!!

 

Ingredients:

4 boneless chicken breasts

10oz diced tomatoes with green chilies

14.5oz diced tomatoes (no salt added)

1 can corn, drained

1 cup black beans, (no salt added) drained & rinsed

1 medium onion, diced

1 jalapeno, diced

2 cloves of garlic

4 cups of Chicken broth or stock, organic

1 tsp. Ground cumin

1 tsp chili powder

1 tsp Himalayan Salt

1/4tsp black pepper

 

Tortilla Strips:

Organic Corn Tortilla wraps

Olive Oil

Chili Powder

Cumin

 

Optional Toppings: Avocado, cheese, cilantro

 

Directions:

Toss all the ingredients into the crock pot, (except for the Tortilla Strip ingredients)

Turn on low for 6-8 hours

Add toppings and serve!

 

Making Tortilla Strips: (you can also make chips instead of strips, just cut into triangles instead)

Preheat oven to 350

Cut 3 corn wraps into strips

Place on a cookie sheet with tin foil

Lightly brush olive oil on them

Mix cumin/chili powder into a small bowl.

Lightly Sprinkle seasoning over the strips

Bake for 10-15 minutes, flipping half way
