01 Nov Sweet Potato Sausage Bake with Gruyere Cheese Sauce
2 teaspoons olive oil
4 medium sweet potatoes, peeled & diced
1 medium onion, diced
1 tablespoon minced garlic
1 package of Jennie-O Hot Turkey Sausage
2 cups finely chopped Kale
½ cup 2% Milk
2 cups chicken broth
¼ cup flour
¾ cup shredded Gruyere cheese
Heat oven to 350.
Take diced sweet potatoes, onions and garlic and place in a ziploc baggie and mix up with olive oil. Pour out onto a cookie sheet and cook for 25 minutes. Halfway through, stir around.
At the same time, place the Turkey Sausage on a cookie sheet as well, and cook for 15-20 minutes, flipping sausages half way.
Slice the sausage links after fully cooked, and add the sausage, kale, and sweet potatoes and onions into a 9×12 casserole dish.
Bring broth and milk to a low boil in a saucepan, then reduce the heat to keep it at a low simmer. Whisk the flour in at small increments into the saucepan to form a thick paste. Add the cheese and stir in until melted.
Pour the sauce mixture over the sweet potatoes, onions, and kale into the casserole dish. Bake at 350 for 15-20 minutes or until the sauce is bubbly and cheese is melted.
Serve with your favorite veggie, I enjoyed mine with some fresh green beans!
